warm weather eating

Matthew has a thing for gazpacho. I have a thing against gazpacho, namely due to my repulsion towards anything cold and chunky involving tomatoes. But I try to be a loving, serving wife (ha) and prepare his favorite warm weather dish every now and then. I’m even learning to appreciate it myself…as long as it’s accompanied by the most amazing spicy corn fritters ever.

We spent our Saturday morning hiking up to the Jones River Gap Falls with the boys strapped to our backs. I think we found our new favorite family outing. The outdoors mysteriously transforms our often antsy, whiny tots into chilled out, generally happy children.

The only downside is that Brighton has asked me every day since if I will carry him around the house in the “pack-pack”. I told he used up all his carrying-time that first year of his life when he refused to be anywhere but strapped to my chest in the Bjorn.

We all enjoyed getting out of our house and away from the ominous task of packing our belongings yet again and preparing for our move in less than four weeks.

In all honesty, not a box has been packed yet. No box has even been assembled. They are currently laying on the floor of the guest room taunting me to dare to begin the task of filling them and watching them overtake our house.

I don’t know why, but I just feel immobilized. The thought of packing up our house a mere 9 months after unpacking it and enduring weeks of wondering which box such and such is lost in, just terrifies me. I picture frantically attempting to pack our house the night before our move after weeks of being unable to do anything. Like the late night exam cram. Let’s hope I get motivated sooner than that.

We spent Sunday evening with our friends picnicking at Furman. We are loving the arrival of spring and letting the boys use up their remaining energy running around outside.

Matt’s fondness for Gazpacho may derive from an event which took place at what he called “our mountain home” (our cabin). He was
in a “pack-pack” on Steve’s back drinking Gazpacho from a small paper cup. He dumped
the whole thing (accident, of course) down
Steve’s shirt collar. The distress in Steve’s
voice as he called MaryLou was interesting…
it contained a few emotions besides distress.

Try a little bit of avocado bits in the Gazpacho.
They add a really interesting change…also great in Salsa. Keeps really well in salsa…guess
it is the acid in the tomatoes. Let me know if
you like it in either.
