crepe weather

Crepes have once again invaded our table. Last night it was ham, swiss, sun-dried tomato & spinach crepes with salad. This morning we topped them with strawberry, cottage cheese, and powdered sugar. Then for lunch this afternoon, we proceeded to finish off the double batch I had made yesterday to last us at least a week. Obviously, they don’t stick around for long in our household. Can you tell we’ve had amazing weather around here for the past few days? Seeing as I’ve been AWOL from this blog for awhile. It’s been a crazy month actually, with all the visitors coinciding with the lack of sleep we’ve been getting. I’m afraid my computer has started to grow cobwebs as the chaos swirls around it.

A few days ago we headed to the stables where we had Brighton and his little buddie’s one year old birthday party last fall. The kiddos loved throwing rocks in the creek and watching the horses bask in the sun.

As for our boys, they seem to really be falling for each other these days. Levi coos and breaks out into a goofy grin every time B’s face appears in front of him. B, feeling totally honored, cries out “Smile! Levi smile!” and heartily laughs in response. Every night Matthew prays with Brighton that these two will be become deep friends and spur each other on…hopefully towards Christ rather than just mischief :)

To close, here’s B pouring over the latest Land of Nod catalog. An interior designer in the making. This boy takes reading seriously, in this chair in particular. When it’s eerily silent, we’ll often find him alone, quietly reading the stack of books he’s laid out on the footrest.

Sorry for all the simple, newsy, lack-of-thoughtful posts lately. My baby brain is fried. We finally got Levi out of our room last night, which offered the first decent stretch of sleep for us in a long time. He peacefully snoozed in our den all night, waking only twice. Maybe we all three just needed some space to help us capture those precious hours of night sleep. And maybe with this extra sleep my brain will head back towards it’s more engaging adult-like capability instead of operating in “No. Yes. Food. Sleep” mode. Here’s to surviving the first three-months of infant land this coming Sunday! Real sleep is on the horizon.

since he is sleeping better he must be feeling
better) Glad to hear they are bonding!
Rex’s twin brother is coming to our home for
their birthday….79th…he will come Sat. nite
and go to Church with us Sunday.

Wonderful pictures! I love crepes as well. Thanks for sharing the recipe. Been thinking about you guys in these early months of transition. Glad to hear you are making it through and managing to inject some creativity into your daily life!

amy. what a joy it is to get to read about a mom at home enjoying her kiddos. hope that brighton and loreley will get to meet again one of these days…until then, keep logging your experiences- what an inspiration to record my own days at home with lo. thank you. love to you all.

AC, I just wanted to drop you a quick note telling you I tried the strawberry/cottage cheese/powdered sugar crepes and I loved them! I used my own crepe recipe that I’ve used before but I wanted to try it with the strawberries etc. I was a little skeptical about the flavor combination but curious enough to give it a try. I think I am going to make them for Matt tomorrow. Thanks for the inspiration. Hope the Smith clan is well.
